Healthy Meat Loaf

You’ll often find mince at a great price at the supermarket, so here’s a dinner meal recipe that is a great one to keep in mind when you are feeling stuck for ideas – or when you’ve got a freezer load of mince that you’d like to put to good use!

For this recipe, a food processor really comes in handy, as you can throw in all the ingredients to easily blend together – my trusty Kenwood food processor is ideal for this.

Makes 6-8 slices

Ingredients:

  • 1 large onion, peeled and chopped into 4
  • 1 clove garlic, peeled
  • 3 slices of wholegrain bread
  • 50g grated parmesan cheese
  • ¼ cup milk
  • ¼ tsp allspice
  • 1 tsp salt
  • 1 tbsp chopped thyme
  • 1 tsp mustard
  • 2 tbsp tomato paste
  • 2 medium eggs (free range)
  • 700g minced lean beef or you can use a combination of beef/pork mince
  • 2 tbsp water

How to make:

1) Preheat oven to 175c.

2) Place onion, garlic, cheese and bread into a food processor and pulse until you get the texture of fine breadcrumbs.

3) Add the remaining ingredients to the food processor and pulse until combined.

4) Place the mixture into a lined loaf tin and bake for around 45-50 minutes, remove from oven and pour off any extra liquid. Cool for 10 minutes or more before slicing. Serve with your choice of vegetables!
