4 ways with stone fruit

Summer fruit = HELLO summer!!
Here are my 4 favourite ways to enjoy the delicious array of stone fruits…
1) Add sliced peach or nectarine to a salad to add colour and a beautiful sweetness! This is a very simple salad, but there are HUNDREDS of other ideas you can find online too: www.healthyfood.co.nz/recipes/2016/december/lamb-skewers-with-peach-and-quinoa-salad
2) Add sliced to water along with a few fresh or frozen blueberries for a tasty hydrating drink that looks awesome. This works really well if you make up a large batch in a jug too. I decided to make my version of this with sparkling water from my SodaStream machine – and serve in a bubbles glass to make it feel a bit more special 😉
3) Make ICE CREAM without any added sugar! Blend frozen chunks of peaches, apricots or nectarines in the food processor (I used my awesome Kenwood one) along with an optional ½ frozen banana and there you have it. It’s as EASY as that!
4) Cut peaches, nectarines and apricots in half, remove the seeds and then brush the flat sides with a little oil. Put the fruit flesh side down (the flat side) onto a griddle pan or the BBQ grill and cook for 4 minutes until slightly soft. Serve with yoghurt – YUM!! xx
