Nourish me bowl

Nourish your body and mind with this delicious bowl of healthy goodness!
Ingredients: (serves 4)
- 4 cups of cooked and cooled quinoa or rice/quinoa mixed (90 second pre-cooked mixes can be used to save time)
- 1 Tbsp. extra-virgin olive oil
- 6 cups of green vegetables e.g. green beans, sugar snap peas, mange touts, courgettes or peas
- 2 cups baby spinach
- Handful of parsley, chopped (I chop this using my Kenwood Food Processor)
- 1 large carrots
- 1-2 large beetroots
- 1 to 2 large ripe avocados, sliced
- ½ cup of pumpkin seeds
- ½ cup of sunflower seeds
Dressing:
- 2 Tbsp. white wine, red wine or apple cider vinegar
- Juice of 1 lemon (approx. 2 Tbsp.)
- 2 Tbsp. Dijon mustard
- 3-4 Tbsp. Extra Virgin olive oil
- 1 clove of garlic crushed
- 2 tsps. of honey or to taste
- Seasoning
How to make:
1) Firstly, make the dressing by placing all the ingredients into a clean jam jar and shake them together. Season to taste.
2) Cut the green vegetables into bite sized pieces and sauté in a frying pan with the olive oil over a medium heat until tender but not over cooked. Add the spinach at the last minute when the heat has been turned off and stir through the other veggies so it slightly wilts.
3) Mix the cooked vegetables into the quinoa/rice along with the chopped parsley and divide this into 4 serving bowls/plates.
4) Grate the carrot and beetroot (I use my Kenwood Food Processor for this with the grating disc as it is much quicker and makes less mess). Add a ¼ of each of the veggies to each bowl/plate.
5) Top each bowl/plate with sliced avocado and the seeds, then drizzle over the dressing to your taste.
Serving suggestions:
Serve with grilled chicken, fish, tofu, tempeh or chickpeas.
