Raspberry ripe bites

Looking for a new summery sweet treat? Give these a whirl!

Ingredients:

  • 1/2 cup rolled oats or quinoa flakes

  • 3/4 cup sunflower seeds

  • 1 tbsp chia seeds

  • 1 1/4 cups desiccated coconut

  • 3 - 4 tbsp maple syrup

  • 1 1/4 cups frozen raspberries

  • 50g dark chocolate, melted

How to make:

  1. Add oats/quinoa flakes, sunflower seeds, and chia seeds into your food processor. Blend on high until the consistency of fine breadcrumbs.

  2. Add coconut, maple syrup and raspberries and pulse to combine. Avoid blending too much at this point or it breaks down the raspberry seeds a bit too much. If the mixture is too wet, you can add more coconut. If it is too dry, add a splash of water.

  3. Roll into 18-20 balls, and dampen your hands slightly to avoid them from sticking.

  4. Place the balls onto non-stick baking paper or a silicon tray and freeze for a few hours.

  5. Remove the bites from the freezer and decorate with the melted chocolate, keep in the fridge until you are ready to enjoy.
