Baked mussels

If you are keen to boost your nutrition and make a super tasty, affordable meal – give this mussel recipe a go.  Cooked on the BBQ, they are an awesome summer BBQ alternative.

Serves 3-4
Ingredients:

  • 20 mussels

  • 1/2 cup grated cheese

  • 1/2 cup breadcrumbs

  • Finely chopped nuts, e.g. almonds, cashews, pistachios.

How to make:

  1. Inspect each mussel, discard any cracked, broken or gaping shells.

  2. Clean mussels by scrubbing under cold water, pull out the beard.

  3. Place mussels in a foil tray with ½ cup of water and then steam them on the BBQ with the lid closed for around 3-5 minutes until the shells open.

  4. Open mussels up, remove ½ the shell, top each mussel with a little bit of grated cheese, some breadcrumbs, and a few finely chopped nuts.

  5. Place back onto the BBQ for the cheese to melt.

Tip: If you don't have a BBQ, you could also do this in the kitchen by steaming the mussels in a pan with water/wine, then pop them under the grill to melt the cheese.
