Apple pie muffins

Ingredients: (makes 18 muffins)

  • 2 cups rolled oats

  • 1¾ cups flour

  • 3 tbsp chia seeds*

  • ¾ cup brown sugar

  • 1 heaped tsp of cinnamon

  • 2 flat tsp baking powder

  • 1 flat tsp baking soda

  • 3 eggs, beaten

  • ¾ cup milk

  • 1 cup apple sauce

  • 1/3 cup oil

  • 2 tsp vanilla extract

  • 2 cups finely chopped apple

 How to make:

  1. Preheat oven to 190 degrees C.

  2. Grease 18 holes in 2 muffin tins (I use silicon trays to reduce sticking!).

  3. In a large bowl, combine the dry ingredients.

  4. In a separate bowl, beat together the eggs, milk, apple sauce, oil, and vanilla extract.

  5. Add the wet ingredients to the dry ones, mix together and stir through the chopped apple.

  6. Bake the muffins for 15 to 20 minutes until a skewer comes out clean. Avoid overbaking.

*I always add chia seeds to my baking to boost the fibre, but you can make these without if you don’t have them in.
