Quick Meal Idea - Asian-Style Tofu Salad

A favourite, easy way to have tofu - really quick and tasty! Goes a long way and keeps well in the fridge too.

Ingredients (serves approx 2):

  • 250g firm tofu

  • 1 tbsp olive oil

  • 2 tbsp tamari/soy sauce

  • 2 carrots

  • 2 spring onion

  • 1 capsicum

  • large handful mung bean sprouts

  • 2 cups shredded lettuce

  • Fresh mint

  • Juice of 1 lemon

  • Salt & pepper, to taste

Method:

πŸ₯— 1. Finely slice and combine the lettuce, capsicum, carrot, spring onion and mint with the mung bean sprouts.

πŸ‘©β€πŸ³ 2. Pan-fry drained/dried tofu in the olive oil, near the end of cooking add the tamari/ soy sauce and sesame seeds.

πŸ‹ 3. Serve with a drizzle of olive oil and the juice of 1 lemon/ lime, and season lightly with salt and pepper.

Options:

- Boost/swap veggies - try cabbage, broccoli, green beans, edamame beans or capsicums of any colour!

- Add some fresh or dried chilli flakes if you like a bit of heat.

- I like to add chopped peanuts too. Enjoy!
