Courgette bake

Such a quick and easy meal! I’ve got courgettes coming out my ears in the garden so always looking for ways to use them.

Ingredients: (serves 2)

  • 4 eggs

  • 2 grated courgettes (excess water squeezed out)

  • 3 tbsp sour cream

  • 2 tbsp flour

  • 1 small onion finely chopped

  • 1/2 cup of grated cheese

    Optional extras:

  • Thinly sliced ham

  • 1 cup of corn or peas defrosted

 How to make:

  1. Beat the eggs then mix in the courgettes, sour cream, flour and onion.

  2. Pop into a greased tin, top with grated cheese, bake at 180 degrees for 30ish minutes or until cooked through. It will depend on the depth of the dish as to how fast it cooks!

Serve with salad on the side and if you are wanting some carbs, add a few cooked potatoes.

For fussy kids that don’t like green - peel courgettes if needed!
