Homemade black bean burgers
Black bean burgers, a great alternative to your usual beef burger if you're wanting to have a meat free day!
Ingredients:
- 1 can of black beans 
- 1/4 cup of chopped red onion 
- 1/4 cup of chopped fresh coriander 
- 1 tbsp of lime juice 
- 1 tbsp of chopped green or red chillies (or you can use chilli flakes) 
- 1 egg (optional) 
- 3/4 tsp of ground cumin 
- 1 garlic clove, crushed 
- Seasoning 
- 3/4 cup of breadcrumbs made from wholegrain bread 
How to make:
- Drain and rinse the black beans. 
- Place the beans along with the rest of the ingredients (apart from the breadcrumbs) into a food processor and blitz for 1 minute, or until the puree is thick. 
- Add 1/4 cup of the breadcrumbs into the puree and mix with a wooden spoon. 
- Use the puree and shape a patty in your hand. 
- Sprinkle 1/2 cup of breadcrumbs onto a plate and coat the patties with the breadcrumbs (refrigerate for an hour or so). 
- Preheat the oven to 210°c and line an oven tray with baking paper. 
- Place the patties onto the oven tray and bake for 5-10 minutes on each side (keep a close eye on the patties). 
- Serve in a bun, or on lettuce and with your favourite vegetables.
