Quick Meal Idea - Mushroom & Spinach Omelette

One of the best easy breakfast, lunch, or dinner meals for one person (or a few people)! You can change up the filling using whatever veg you have to hand - the options are endless!

Ingredients (serves 1):

  • 2 eggs

  • 1-2 tbsp milk

  • 80g mushrooms, sliced

  • Sprig of thyme

  • Large handful spinach

  • 30g cheese, grated

  • 1 tsp oil

  • Salt & pepper, to taste

Method:

🍄 1. Pan fry sliced mushrooms with thyme, salt and pepper, set aside  

🥚 2. Whisk eggs in a bowl with milk then pour egg into pan and add spinach, mushrooms and cheese, cook until egg is set and golden underneath

🥬 3. Fold omelette in half and slide onto your plate

Options:

- Double the ingredients for two people and cut the omelette in half to serve.

- Boost/swap veggies - try capsicums, courgette, onion

- Avocado and fresh tomatos are great to serve alongside too. Enjoy!
