One Pot Mexican Quinoa

A quick and easy nutrition-packed dish that is ready in no time!

Ingredients (serves 6)

  • 1 cup quinoa

  • 1 ½ cups of frozen corn

  • 1 can of black beans, drained and rinsed

  • 1 tbsp sliced jalapenos (optional)

  • 1 red onion, finely sliced

  • 1 cup stock, ideally reduced salt

  • 1 can of chopped tomatoes

  • 1 tsp chilli flakes (optional)

  • ½ tsp ground cumin

  • ½ cup of water

To serve:

  • Juice of 1 lemon or lime

  • Handful of chopped coriander or parsley

  • Chopped avocado (optional)

How to make:

  1. Add all ingredients together in a large non-stick pan, bring to a simmer, then turn the heat down and place the lid on the pan.

  2. Cook over a low heat for 15-20 minutes or until the quinoa is cooked. Add a splash more water if needed.

  3. When cooked, add lemon/lime juice to taste, chopped herbs and top with chunks of avocado.

  4. Serve and enjoy!
