Pear, asparagus and blue cheese salad

This salad is a crowd pleaser, it’s super quick and easy! Try it out this summer.

Ingredients:

  • 1 bag baby spinach, baby salad leaves or rocket

  • 1 pear 

  • 1-2 handfuls of asparagus

  • 2–3 large handfuls baby spinach or salad greens

  • 1 tbsp of honey 

  • 1/2 - 3/4 cup of walnuts

  • 100g blue cheese

How to make:

  1. Remove the woody ends of the asparagus, then pan fry over a gentle heat to soften slightly, place to one side. 

  2. Slice pear and cover in the juice of 1/2 a lemon to stop it going brown, place on top of spinach.

  3. Place asparagus on top of baby spinach and sliced pears.

  4. Add 1 rounded tablespoon of honey to heat, with 1/2 - 3/4 cup of walnuts, until they start to caramelize (takes 2-3 mins over a medium heat in a non stick pan. Be sure to watch closely so they don’t burn)

  5. Add chunks of blue cheese to the top of salad.

  6. Sprinkle over caramelized walnuts.

Optional extras:

  • Chunks of avocado and pomegranate seeds for extra colour!

  • You can add a balsamic dressing if you like, but with the soft asparagus, creamy cheese and lemon juice on the pear it works well by itself.

Top tips

  • You can try this salad with apple, peach, nectarine, or even strawberries instead (just pass on the lemon juice with these options).
