Quick and easy summer salads

Looking for something tasty to enjoy with a bbq over summer? Here are 3 quick and easy salads that you can throw together. They are also perfect as leftovers the next day or in the lunchbox.

CHICKPEA & EDAMAME SALAD

Ingredients:

  • 1 can of chickpeas, drain and rinse

  • 1/2 finely chopped red onion

  • Handful of cherry tomatoes – chopped in half

  • Handful of chopped parsley or coriander

  • 1/2 cup edamame beans (I buy them from the frozen section next to the other frozen veggies, cover in boiling water then drain)

  • 1/2 avocado – chopped

  • 1 lemon

  • Olive oil

How to make:
Place all ingredients into a salad bowl. Mix well and squeeze over lemon juice and drizzle with extra virgin olive oil.

 

COURGETTE & FETA SALAD

Ingredients:

  • 4-6 courgettes, sliced lengthways into 3mm thick slices

  • 1/2 cup edamame beans

  • Handful fresh mint

  • 50g feta

  • 4-6 courgettes, sliced lengthways into 3mm thick slices

  • Olive oil

How to make:
Brush courgettes lightly with olive oil, then grill on the BBQ or cook in a hot pan until they have some colour and going soft (not floppy!). In a large bowl put edamame beans, finely chopped mint, mix. Add in the grilled courgette and stir through. Top with crumbled feta.

 

CAPRESE SALAD

Ingredients:

  • 5 tomatoes sliced (approx 5mm thick)

  • 1 large fresh mozzarella ball sliced (approx 5mm thick)

  • Handful fresh basil

  • Olive oil

  • Balsamic vinegar (optional)

How to make:
Layer slices of tomato and mozzarella cheese on a serving plate. Add torn up basil leaves on the top. Drizzle with olive oil and if you like, a little balsamic vinegar too!
