Quinoa and banana pancakes

This is a super tasty gluten free version of a household favourite!

Ingredients: (serves 2)

  • 2 bananas

  • 2 eggs

  • 1/2 cup quinoa flakes

  • 1 tsp vanilla extract

How to make:

Blend all ingredients together until smooth then pan fry in a non stick pan over a medium heat until cooked through on both sides.

Tip:

You can find quinoa flakes in Pam’s superfoods range in New World but if you aren’t gluten free then you can use rolled oats instead.
