Super seedy crackers

I am always looking for new ideas for the lunch box as well as quick healthy lunch and snack ideas and I have found myself a new winner!

Ingredients:

  • 1 cup sunflower seeds

  • 1 cup pumpkin seeds

  • ½ cup chia seeds

  • ½ cup sesame seeds, (white, black or a mixture)

  • ¼ cup flaxseed, (linseed)

  • ¼ cup hemp seeds

  • 1 ½ cups water

  • 1 tbsp extra virgin olive oil

Optional extras:

  • 1 tbsp dried herbs – mixed herbs or parsley work well

  • 3 tbsp dried cranberries, raisins or sultanas

  • 1 tsp chilli flakes or spice mix

  • Pinch of salt

How to make:

  1. Preheat oven to 160 degrees

  2. Mix all ingredients together and set aside for 15 minutes to allow the seeds to absorb the water and the chia seeds to create a gel.

  3. Spread half the mixture over a lined baking tray until it is about 3-4mm thick. Repeat with the second half of the mixture on a second lined tray.

  4. Bake for approx 50 minutes, or until they are golden brown and crispy. Rotate the trays every 20 minutes during cooking to ensure the crackers bake evenly.

  5. Remove from the oven when cooked and allow to cool.  Break up into whatever shapes you like!

  6. Store in an airtight container. 

Tip:

If you like them extra crispy, make them very thin and pop them back in the oven for a few extra minutes after cutting so the bottom gets a little more cooking.

You can also pop back in the oven anytime to crisp them up again if you have the in a contain for a few days and want them back to max crispiness.
