Tuna Niçoise Salad
This is one of my all-time favourite salads! This quick and healthy version is made with canned tuna. Enjoy!
Ingredients (serves 2)
4 egg-sized potatoes
2 boiled eggs
185g can of tuna in spring water, drained
1 tbsp lite mayonnaise
Juice of 1/2 a lemon
1 tsp capers, chopped
1-2 anchovies, very finely chopped
10 black olives, sliced in half
6 cherry tomatoes, sliced in half
3 cups shredded cos lettuce
1 tbsp grated Parmesan cheese
How to make:
Peel potatoes and boil in water until cooked, around 15 minutes. Drain and set aside to cool. Meanwhile, boil eggs, de-shell and chop into quarters. Set to one side.
Combine tuna, mayonnaise, lemon juice, capers and anchovies in a large bowl.
Add olives, tomatoes and lettuce. Mix together until well combined.
Serve with chopped potatoes, eggs and a sprinkling of grated Parmesan.
