Tuna Niçoise Salad

This is one of my all-time favourite salads! This quick and healthy version is made with canned tuna. Enjoy!

Ingredients (serves 2)

  • 4 egg-sized potatoes

  • 2 boiled eggs

  • 185g can of tuna in spring water, drained

  • 1 tbsp lite mayonnaise

  • Juice of 1/2 a lemon

  • 1 tsp capers, chopped

  • 1-2 anchovies, very finely chopped

  • 10 black olives, sliced in half

  • 6 cherry tomatoes, sliced in half

  • 3 cups shredded cos lettuce

  • 1 tbsp grated Parmesan cheese

How to make:

  1. Peel potatoes and boil in water until cooked, around 15 minutes. Drain and set aside to cool. Meanwhile, boil eggs, de-shell and chop into quarters. Set to one side.

  2. Combine tuna, mayonnaise, lemon juice, capers and anchovies in a large bowl.

  3. Add olives, tomatoes and lettuce. Mix together until well combined.

  4. Serve with chopped potatoes, eggs and a sprinkling of grated Parmesan.
