Quick Meal Idea - Colourful Quinoa Salads
I sometimes make a large batch of quinoa (I’ve done this in a glass lidded-bowl in the microwave) and keep it in the fridge to make easy meals during the week.
Quinoa is nutrient-dense, gluten-free and a complete plant-based protein containing all nine essential amino acids - so it’s a great option - but you could swap it for another grain such as brown rice, or pasta (higher fibre ones are best).
Below are a couple of salad ideas using what I had available in the fridge!
Ingredients:
Cooked quinoa
Edamame beans
Capsicum
Cucumber
Tomatoes
Cottage cheese
Beetroot hummus
Avocado
Pumkin seeds
Basil and mint
Salt & pepper
Olive oil
Ingredients:
Cooked quinoa
Carrot
Capsicum
Cucumber
Tomatoes
Boiled egg
Cottage cheese
Avocado
Sesame seeds
Basil
Salt & pepper
Just pop it all in a bowl - when you combine these ingredients the salad becomes quite creamy, see below, so no need for a dressing!
