Speedy Oaty Pancakes - perfect for Mother's Day or any day!

 
 

Speedy Oaty Pancakes

These delicious oat pancakes are the perfect start to your day, providing long-lasting, sustained energy right through until lunch time. 

Ingredients (approx 6 pancakes)

  • 1 ½ cups rolled oats 

  • 1 tbsp chia seeds 

  • 1 ripe banana 

  • 1 egg 

  • 1 tsp baking powder 

  • 125g Greek or thick natural yoghurt 

  • 1/4 cup milk

  • Oil for cooking 

How to make:

  1. Blend rolled oats in a food processor to make a fine flour.

  2. Add chia seeds, banana, egg, yoghurt, milk and baking powder, blitz together to form the pancake batter.

  3. Over medium heat, add 1 tbsp of oil in a non-stick pan and add spoonfuls of the mixture to the pan. (I used my amazing nonstick, PFAS-FREE pan from GreenPan to achieve this)

  4. Cook for about 2-3 minutes until you start to see bubbles appearing on the top of the batter. Flip and cook until the other side is golden brown, about 1-2 minutes. 

Serve the pancakes with whatever toppings you like – yoghurt, banana, and berries work well!
